Aurélien Laherte is a force to be reckoned with in the Champagne region. In addition to taking a progressive stance on natural viticulture and winemaking, Laherte and his father Michel both believe that the use of chemicals and herbicides prevents a full expression of terroir. Fruit for ‘Les Vignes de Chavot’ comes from various clay, silt, and chalky soils in Village de Chavot and Mancy, all of which are farmed organically. Fruit is hand-harvested and fermented in used Burgundy barrels. This 100% Pinot Meunier is thirst-quenching and tasty, marked by notes of citrus, white blossoms, brioche, and dried pears.
