This small-production wine comes from David and Christine Wilson’s family vineyard (Rancho Chimiles) in the southern part of the Napa Valley. Fruit comes from 45-year-old vines and is vinified in a combination of concrete and neutral oak. The wine is all things cranberries, tart cherries, white pepper, and fresh cut herbs (tarragon, sage, & rosemary). Serve slightly chilled and let the wine’s naturally high acid satiate your thirst!
