Lassaigne Brut Nature Champagne 2010


Jacques Lassaigne’s 4.7 hectares of vines are situated in Montgueux (Aube), one of  Champagne’s ‘underdog’ regions. Here, soils are limestone-rich, similar to those in Mesnil, and lead to high-acid fruit. Jacques’ son Emmanuel now spearheads the estate’s vinification and made the radical decision to bottle wines from individual parcels. Only native yeasts are used and all disgorgements are done by hand-- a very uncommon practice in the region.
