Founded in 1825, Domaine Faiveley has become one of the largest and most renowned négociant/producers in all of Burgundy. Their holdings total over 135 hectares across some of the Cote d’Or’s most fetishized growing sites. ‘Clos Rochette Monopole’ has been one of the estate’s monopoles since 1933 and is dominated by compact clay-limestone soils. Fruit is hand-sorted and fermented in French oak barrels, 25% of which are new, followed by 16 months of aging. The final wine is woody and fresh, marked by flavors of yellow stone fruit, lemon oil, lemon cream, and baking spice. Pair with seafood or creamy pasta dishes.
