Varietal Alicante Bouschet from a 30 year old single-vineyard in Spain’s Almansa region. Fruit grows in chalky clay soils and ferments with wild yeasts, followed by a week long maceration in cement. The wine is refreshing and dark fruited, full of chalky minerality and earth spice. Perfectly paired with savory meat dishes, sausage and peppers, and paella.
