Bois d’Yver is the brainchild of Thomas Pico, best-known for his work at Pattes Loup. Pico farms these 2.5 hectares in Chablis all organically and vinifies the juice with the same ‘hands-off’ mentality used at Pattes Loup. Fruit for this small-production cuvée comes from a single parcel in Courgis, rooted into stoney clay-chalk soils. This zesty, steel-aged wine is approachable in its youth and pairs well with oysters, seafood, and goat cheese.
