French for ‘Wolf’s Paws,’ Domaine Pattes Loup was founded by Thomas Pico back in 2005, located in the village of Courgis, just outside of Chablis. His 2.4 hectares of low-yielding vines are farmed all organically, grown at altitudes of up to 300 meters. ‘Cotes de Jouan’ shows tons of citrusy tension, with chalky undertones and a fresh, mineral-driven finish.
