Pierre Gonon is one of the most important producers in all of Saint-Joseph, as his strong advocacy for non-interventionist farming has made waves across the appellation. ‘Les Oliviers’ is regarded as the greatest place for producing white wine in Saint-Joseph. Fruit is whole cluster pressed and naturally fermented in cask, followed by 11 months of aging on regularly stirred fine lees in a combination of barrique and demi-muid.
