Now headed by brothers Denis and Bertrand, Domaine Chevillon estate bottles all of their wines, which ooze with elegance and grace; low-yielding vines undergo long fermentations, followed by 16-20 months of elevage in barrel. ‘Cailles’ comes from a single 1er Cru vineyard, full of mineral-driven backbone and energetic acidity; 2015 is dense and juicy, with concentrated notes of spice and well-integrated tannins.
