Second generation winemakers Francois and Manuela Chidaine have pioneered the natural wine movement in the Loire for decades, farming only organically and biodynamically, as well as encouraging the use of cover crops and ‘carbon farming.’ ‘Les Choisilles’ is concentrated and dry, showing notes of baked apples and citrus, with a persistent, energetic acidity.
