Jerome Bretaudeau works biodynamically and organically, certified in both, and we reflect on his farming the rocky soils of Muscadet as admirable. Gaïa comes from old-vine Muscadet, fermented with indigenous yeast and aged in ovoid (egg-shaped) amphora.
