Credited with putting Cornas back on the industry’s radar, Thierry Allemand now farms five hectares of vines organically and focuses on single-vineyard bottlings. ‘Reynard’ is produced from Thierry’s older vines and is whole cluster fermented, aged for 24 months in oak, and bottled unfined/unfiltered. Compared to ‘Chaillots,’ this wine is darker and more concentrated, yet equally sophisticated. Serve with braised beef or hamburgers on the grill.
