After his death in 2016, Stéphane Moreau’s vision is continued on by his assistant winemaker and wife, producing lifted, Dauvissat-style wines amongst the new generation of Chablis producers. Extensive sur-lie aging and healthy fruit create vivacious wines, full of saline-tinged harmony. The 2016 Chablis comes from 25 year old vines in Kimmeridgian soils, showing notes of citrus, stone fruit, salt, and wet rocks. Delicious!
