Il Borghetto proprietor Anthony Cavallini marches to the beat of his own drum. In addition to farming his five hectares of vines organically, Cavallini purposefully declassifies his DOCG wines to IGT status for the sake of viticultural and vinification freedom. Cavallini uses whole cluster fermentation in the cellar (a rather unusual practice for Italians) and bottles his wines in Burgundy bottles. ‘Monte de Sassi’ is dry and red-fruited, noted with flavors of wild herbs, fresh flowers, tomato leaf, and balsamic. Juicy and structured, this wine is a steal for the price.
