After completing a biodynamic conversion, 'Chene' is now released with a Demeter-certified stamp. In characteristic Lady of the Sunshine practice, the grapes for this Chardonnay were foot-stomped, fermented with native yeast, and bottled unfined and unfiltered. Winemaker Gina Giugni describes this way: "Think olive oil cake, lemon zest, and sea salt."
