Champagne native Anne-Sophie Dubois is shaking up Beaujolais’ viticultural scene like no other. Dubois farms her eight hectares in Fleurie all organically and uses a hands-off approach in the winery, favoring classic vinification over the signature ‘Beaujolais-style’ carbonic. Fruit for ‘Les Labourons’ (formerly known as ‘Clepsydre’) comes from Anne-Sophie’s organically farmed old vine parcel in Fleurie. Grapes are destemmed and aged for 13 months in neutral oak. This highly terror-reflective wine shows flavors of bright red fruit, tart cherries, and granite-influenced minerality, marked by gritty tannins and a dusty finish.
