Domaine Chevillon Nuits-St-Georges 1er Cru 'Cailles' 2015

Located in the heart of Nuits-Saint-Georges, Domaine Chevillon’s roots date back to the 1800s, when Symphorien Chevillon took to working the vine and selling off fruit. Now headed by brothers Denis and Bertrand, Domaine Chevillon estate bottles all of their wines, which ooze with elegance and grace; low-yielding vines undergo long fermentations, followed by 16-20 months of elevage in barrel. ‘Cailles’ comes from a single 1er Cru vineyard, full of mineral-driven backbone and energetic acidity; 2015 is dense and juicy, with concentrated notes of spice and well-integrated tannins.
