Antoine Foucault, son and nephew of famed (former) Clos Rougeard owners, established Domaine du Collier alongside Caroline Boireau 20 years ago, farming 6.5 hectares of vines organically and biodynamically. Fruit is hand-harvested and fermented with native yeast. The 2009 Saumur Blanc, now with almost a decade of age on it, is still zesty and alive, full of tangy acidity and stony minerality.
