Their 13.5 hectares are farmed sustainably, with cold macerations, separate parcel vinification, indigenous yeasts, and a non-interventionist mentality all implemented. The 2016 ‘Clos du Cellier Aux Moines’ is silky & dense, dominated by notes of fleshy cherry and earth.
