Enric Soler took over his grandfather’s 75-year-old vines back in 2004 and is now producing some of Penedes’ most sophisticated varietal Xarel-lo. Vines are bush-trained and farmed biodynamically, creating fruit that is then vinified with a minimalist mentality in the cellar. ‘Improvisacio’ shows raw and earthy flavors of yellow stone fruit, wet stones, and forest floor, leading to a high-acid, slightly salty finish.
