Fourth generation winemaker Dominique Joseph farms the family’s 13 hectares of vines as naturally as possible, eliminating the use of herbicides and pesticides. Fruit for ‘Les Poyeux’ hails from a small, .85 hectare parcel situated on organically farmed, sandy soils. Macerated for 3-4 weeks, followed by one year of aging in used barrels. Soil-driven red fruit with peppery earth spice notes dominate the palate; serve slightly chilled.
