Marc Soyard took over this Dijon-owned property just five years ago, tending eight hectares of vines under the Bourgogne AOC. Vines are tended organically and with a hands-off mentality, with partial whole-cluster fermentation implemented and native yeasts. This Bourgogne Rouge comes from 30+ year old vines, with partial carbonic fermentation, followed by 10-12 months of aging in barrel. Crunchy, bright, and full of red fruit flavors.
