Olivier Morin is no stranger to the vineyards of Chablis. His great-great-grandparents were the first vignerons in Chitry to bottle their own wines, and today, Olivier and his wife Nelly continue to pioneer this rather underrated part of Burgundy. At the Morin’s estate, all 12 hectares of vines are farmed organically and with the use of natural grass covers. Cellar work is done by gravity and all fermentations are done with nativ yeasts. ‘Constance’ is vivacious and mineral-driven, marked by silky flavors of white flowers, lemon skin, sea salt, and stone fruits. Serve with freshly shucked oysters or poultry-based dishes.
